Black Bean Lime Salsa

This is a crowd pleaser! Everyone, and I mean everyone, raves about this dip. It’s so fresh and healthy, but still full of flavor. It’s perfect for so many occasions; tailgate, the beach, holiday parties, Mexican fiestas, Sunday afternoons, Tuesday mid-day snack… I think you see where I’m going. I promise it works for just about every opportunity. The fresh tomatoes, jalapenos, and onion, mixed with the corn and black beans, makes the most refreshing dip that you don’t feel guilty indulging in. It’s a refreshing change up from your usual heavy, cheesy, greasy dips, and it only takes about ten minutes to throw together!

Bean Salsa Dip

Ingredients

  • 1 can black beans with juices
  • 1 can yellow corn drained
  • 2 tomatoes
  • 1/2 red onion
  • 1/2 jalapeno seeds removed
  • 1 lime
  • 3/4 tsp salt or to taste
  • 3/4 tsp pepper or to taste

Instructions

  1. Wash and dry all produce.

  2. Chop tomato and onion into small pieces. Dice the jalapeno. Add these ingredients to a large bowl.

  3. Add the can of black beans (keep the juice) and corn to the bowl.

  4. Cut lime in half. Squeeze the lime over the vegetables.

  5. Season with salt and pepper.

  6. Serve with your choice of chips

Recipe Notes

You can add the whole jalapeno, or jalapeno seeds, if you prefer it to be spicier.
